Bruno van der Burg

Born in Holland, Bruno van der Burg came to Hong Kong on a two-week holiday in 1985, and has been in Asia ever since.

Distinctive Service

Trained as an art historian at Amsterdam University (that’s Bruno’s beautiful handwriting on the menus) Bruno has worked in restaurants in London and Hong Kong. He first worked with Michelle in Hong Kong in 1985, and the partnership was such a good fit that when M at the Fringe opened in 1990, Bruno rejoined Michelle as restaurant manager.

In 1999, Bruno brought his distinctive ethos to the operation of M on the Bund: "We want to make our guests comfortable and relaxed in a luxurious - but not formal - atmosphere," he says.
