Capital M serves a delicious menu of modern European food: a collection of classics, nostalgic favourites and dishes from the Middle East and North Africa, too.  M's "Famous Dishes," beloved for over two decades by diners at Hong Kong's M at the Fringe and Shanghai's M on the Bund, feature here as well, and include M’s Crispy Suckling Pig; Our Hot House-Smoked Salmon; the world famous Slowly Baked, Salt-Encased Selected Leg of Lamb and for dessert, of course, M’s Very Famous Pavlova.

China's flavourful local bounty

For Chef Rob Cunningham, M's cuisine begins with fresh, seasonal ingredients. . "I am so excited by the produce available to us here in Beijing. When you bring together such beautiful ingredients and combine them using classic and modern techniques, the results on the plate are fantastic."

Rob's creations use China's flavourful local bounty, including surprising produce like foie gras, black truffles, all manner of birds (including, of course, duck) fabulous herbs and unusual fruits. We import what we need to make authentic western cuisine, and make our own breads, ice creams and desserts - Rob is continually inspired by the flavours of the vegetables and fruits in Beijing's neighbourhood markets.
